Our dry cure & smoked back bacon is made using Rare Breed, Free Range meat from our own herd of Large Black Pigs. The loins we use have an ample layer of fat which helps give the bacon plenty of flavour. The bacon is allowed to cure for about a week before it is smoked & cut, the whole process taking about three weeks.
Our rare breed, Large Black Pigs are reared slowly outside in Oxborough, West Norfolk. The meat The Large Black produces is renowned for being flavoursome with a succulent texture.
